  • 1 pound Boneless, Skinless Chicken Breast Diced into bite-sized pieces.
  • 2 medium Potatoes Yukon Gold or Russet, peeled and cubed.
  • 2 medium Carrots Peeled and diced.
  • 1 stalk Celery Diced.
  • 1 medium Onion Diced.
  • 3 cloves Garlic Minced.
  • 4 cups Chicken Broth Low-sodium recommended.
  • 1 cup Milk or Heavy Cream Optional for creaminess.
  • 2 tablespoons Olive Oil For sautéing.
  • to taste Salt
  • to taste Black Pepper
  • 1 tablespoon Fresh Herbs Chopped parsley or thyme for garnish.

Instructions
 

  • Prepare all ingredients: dice chicken, peel and cube potatoes, dice carrots, celery, onion, and mince garlic.
  • In a large pot, heat olive oil over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
  • Add minced garlic and sauté for an additional 1-2 minutes.
  • Add diced carrots and celery, sauté for another 5 minutes.
  • Incorporate diced chicken, cooking for 5-7 minutes until no longer pink.
  • Add cubed potatoes and chicken broth, stir to combine.
  • Bring to a gentle boil, then reduce heat and simmer for 20-25 minutes.
  • Stir in milk or cream and simmer for an additional 5 minutes.
  • Season with salt and pepper to taste.
  • Let the soup rest for a few minutes before serving, garnished with fresh herbs.

Notes

Store leftovers in an airtight container for up to three days. Reheat gently on the stove.
