Instructions
 

  • 1. Begin by boiling a large pot of salted water. Once boiling, add the pasta and cook according to the package instructions until al dente. Stir occasionally to prevent sticking.
  • 2. While the pasta cooks, heat a large skillet over medium heat. Add olive oil and warm for about 30 seconds.
  • 3. Remove the casing from the sausage and crumble it into the skillet. Cook for about 5-7 minutes until browned and cooked through.
  • 4. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  • 5. Reduce heat to low and pour in the heavy cream. Stir well and let it simmer gently for about 5 minutes.
  • 6. Gradually add grated Parmesan cheese, stirring continuously until melted and the sauce thickens.
  • 7. Once the pasta is cooked, reserve about ½ cup of pasta water, then drain the rest. Add the drained pasta to the skillet and toss to coat.
  • 8. Season with salt and pepper to taste, stirring to combine.
  • 9. Garnish with chopped parsley and serve immediately.
