Instructions
Heat olive oil in a large pot over medium heat. Add crumbled Italian sausage and brown for 5-7 minutes.
Add chopped onion and sauté for 3-4 minutes until translucent.
Stir in minced garlic, diced carrots, and diced celery. Sauté for an additional 5 minutes.
Pour in chicken broth and bring to a gentle simmer. Add Italian seasoning, salt, and pepper to taste.
Let the soup simmer for 15-20 minutes until vegetables are tender.
Reduce heat to low and stir in heavy cream. Heat through without boiling.
Add chopped spinach and stir until wilted. Adjust seasoning if necessary.
Ladle into bowls and garnish with fresh herbs or cheese if desired. Serve immediately.
Notes
This soup can be made in advance and tastes even better the next day. Store leftovers in an airtight container for up to 3 days.
