Instructions
 

  • 1. Start by cooking the orzo pasta. Bring a large pot of salted water to a boil. Add the orzo and cook according to the package instructions until al dente, usually around 8-10 minutes. Once done, drain the orzo and set it aside.
  • 2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes or until the onion becomes translucent.
  • 3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes, stirring frequently to avoid burning.
  • 4. Next, add the sliced cremini mushrooms to the skillet. Sauté the mushrooms for about 5-7 minutes until they are browned and tender.
  • 5. Once the mushrooms are cooked, add the fresh spinach to the skillet. Stir the spinach into the mixture and cook for 2-3 minutes, or until it wilts down.
  • 6. Pour in the heavy cream and stir well to combine all the ingredients. Allow the mixture to simmer for about 2-3 minutes.
  • 7. Add the grated Parmesan cheese to the skillet, stirring until it melts and integrates into the creamy sauce.
  • 8. Season the mixture with salt, pepper, and Italian seasoning to taste. Mix well.
  • 9. Finally, add the cooked orzo to the skillet, tossing everything together gently to combine.
  • 10. Once everything is well combined, remove the skillet from heat. Serve warm, garnished with fresh parsley or basil if desired.

Notes

This dish can be made ahead of time. Prepare the creamy mixture and orzo separately, then combine just before serving.
