1. Cook the noodles according to package instructions. Drain and rinse under cold water.
2. Cut the chicken into bite-sized pieces and season with salt and pepper.
3. Heat vegetable oil in a skillet over medium-high heat. Cook chicken until browned and cooked through.
4. Remove chicken and set aside. In the same skillet, sauté garlic and ginger until fragrant.
5. In a mixing bowl, combine peanut butter, soy sauce, honey, coconut milk, and lime juice. Whisk until smooth.
6. Pour the peanut sauce into the skillet and simmer for a couple of minutes.
7. Add the cooked chicken back into the skillet, stirring to coat in the sauce.
8. Add the drained noodles and toss until well coated. Adjust consistency with water or coconut milk if needed.
9. Serve hot, garnished with chopped peanuts and fresh herbs.
