Instructions
Preheat your oven to 400°F (200°C).
Wash the fresh tomatoes thoroughly and pat them dry.
Slice the tomatoes in half, place in a mixing bowl, drizzle with olive oil, and sprinkle with salt, pepper, and thyme or basil. Toss gently.
Spread the seasoned tomatoes cut-side up on a baking sheet lined with parchment paper.
Roast the tomatoes for about 20 to 25 minutes until slightly charred and soft.
Toast the slices of bread until golden brown and crispy.
Mix the cream cheese with lemon zest until smooth.
Spread the cream cheese mixture onto each slice of toasted bread.
Carefully place the roasted tomatoes on top of the cream cheese-covered toast.
Sprinkle red pepper flakes over the top if desired.
Serve immediately while the tomatoes are still warm.
