  • 1 teaspoon Thyme or Basil Finely chopped fresh thyme or basil leaves.
  • 4 slices Bread Hearty bread like sourdough or whole wheat.
  • 4 ounces Cream Cheese Plain or flavored cream cheese.
  • 1 unit Lemon Zest Zest of one lemon for flavor.
  • 1 pinch Red Pepper Flakes Optional for a hint of heat.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Wash the fresh tomatoes thoroughly and pat them dry.
  • Slice the tomatoes in half, place in a mixing bowl, drizzle with olive oil, and sprinkle with salt, pepper, and thyme or basil. Toss gently.
  • Spread the seasoned tomatoes cut-side up on a baking sheet lined with parchment paper.
  • Roast the tomatoes for about 20 to 25 minutes until slightly charred and soft.
  • Toast the slices of bread until golden brown and crispy.
  • Mix the cream cheese with lemon zest until smooth.
  • Spread the cream cheese mixture onto each slice of toasted bread.
  • Carefully place the roasted tomatoes on top of the cream cheese-covered toast.
  • Sprinkle red pepper flakes over the top if desired.
  • Serve immediately while the tomatoes are still warm.

Notes

Store any unused roasted tomatoes separately from the toast to keep the bread crispy.
