Instructions
Prepare your ingredients: Clean and devein the shrimp, and pick through the crab meat to remove any shell fragments.
In a large pot, melt the butter over medium heat until foamy.
Add shallots, garlic, celery, and carrots. Sauté for 5-7 minutes until soft and translucent.
Pour in the vegetable broth and bring to a gentle simmer.
Add the crab meat and shrimp, cooking until shrimp are pink (about 3-4 minutes).
Remove half of the bisque and blend until smooth, then return to the pot.
Stir in the heavy cream and heat gently, adjusting seasoning with salt and pepper.
Garnish with fresh herbs and serve hot.
Notes
Leftover bisque can be stored in an airtight container for up to 3 days. Reheat gently on the stove.
