Each fillet should be about 6 ounces.

Sauté until wilted.

Jarred or homemade, chopped.

Instructions
Gather all ingredients. Ensure salmon fillets are thawed and pat dry.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sauté chopped onion for 3-4 minutes until translucent.
Add minced garlic and cook for 1 minute until aromatic.
Add fresh spinach and cook for 2-3 minutes until wilted.
Pour in heavy cream and bring to a gentle simmer.
Add roasted red peppers and simmer for 5 minutes.
In a separate skillet, heat remaining olive oil and season salmon with salt and pepper. Cook salmon for 4-5 minutes on one side.
Flip salmon and cook for another 3-4 minutes until cooked through.
Transfer salmon to the creamy sauce and spoon sauce over the top.
Cook together for an additional 2-3 minutes on low heat.
Squeeze lemon juice over the dish before serving.
Serve hot with your favorite side dishes.
