  • 4 fillets Salmon Fillets Each fillet should be about 6 ounces.
  • 2 cups Fresh Spinach Sauté until wilted.
  • 1 cup Roasted Red Peppers Jarred or homemade, chopped.
  • 1 cup Heavy Cream For the creamy sauce.
  • 3 cloves Garlic Minced.
  • 1 small Onion Finely chopped.
  • 2 tablespoons Olive Oil For sautéing.
  • to taste Salt
  • to taste Black Pepper Freshly cracked.
  • 1 tablespoon Lemon Juice Freshly squeezed.

Instructions
 

  • Gather all ingredients. Ensure salmon fillets are thawed and pat dry.
  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sauté chopped onion for 3-4 minutes until translucent.
  • Add minced garlic and cook for 1 minute until aromatic.
  • Add fresh spinach and cook for 2-3 minutes until wilted.
  • Pour in heavy cream and bring to a gentle simmer.
  • Add roasted red peppers and simmer for 5 minutes.
  • In a separate skillet, heat remaining olive oil and season salmon with salt and pepper. Cook salmon for 4-5 minutes on one side.
  • Flip salmon and cook for another 3-4 minutes until cooked through.
  • Transfer salmon to the creamy sauce and spoon sauce over the top.
  • Cook together for an additional 2-3 minutes on low heat.
  • Squeeze lemon juice over the dish before serving.
  • Serve hot with your favorite side dishes.

Notes

Store leftovers in an airtight container for up to 2 days. Reheat gently.
