Instructions
Slice the ripe bananas and strawberries evenly, ensuring they are ready to layer in the pudding.
In a medium saucepan over medium heat, combine the granulated sugar, flour, and salt. Whisk thoroughly to eliminate any lumps.
Gradually add the milk to the dry ingredients while continuously whisking until well combined.
Cook the mixture over medium heat, stirring constantly until it thickens and bubbles form around the edges.
Once it reaches a gentle boil, reduce the heat to low and cook for an additional 2-3 minutes, stirring continuously.
Remove from heat and stir in the unsalted butter until melted and fully incorporated.
Let the pudding cool slightly at room temperature for about 10 minutes.
Whip the heavy cream in a separate bowl until soft peaks form, then gently fold it into the cooled pudding mixture.
In a serving dish, layer the sliced bananas and strawberries with the pudding mixture, finishing with a layer of pudding on top.
Cover with plastic wrap and refrigerate for at least 2 hours to set.
Before serving, garnish with additional sliced strawberries and fresh mint if desired.
