Instructions
Prep all ingredients and gather them for cooking.
Heat a large skillet over medium-high heat and add olive oil.
Season salmon fillets with salt and pepper, then sear in the skillet for 4-5 minutes on one side.
Flip the salmon and cook for an additional 3-4 minutes until cooked through.
Remove salmon and set aside, covering with foil to keep warm.
In the same skillet, lower heat and sauté minced garlic for 30 seconds.
Add sun-dried tomatoes and cook for 1 minute.
Add spinach and stir until wilted, about 2-3 minutes.
Pour in heavy cream and bring to a gentle simmer.
Stir in Parmesan cheese until melted and combined.
Return salmon to the skillet, spooning sauce over it, and simmer for 2-3 minutes.
Plate the salmon and garnish with fresh basil before serving.
Notes
