  • 4 pieces Salmon Fillets Approximately 6 ounces each.
  • 2 tablespoons Olive Oil Extra virgin olive oil for searing.
  • 3 cloves Garlic Fresh minced garlic.
  • 3 cups Spinach Fresh baby spinach.
  • 0.5 cup Sun-Dried Tomatoes Chopped for flavor.
  • 1 cup Heavy Cream For the creamy sauce.
  • 0.5 cup Parmesan Cheese Grated for flavor.
  • to taste Salt Kosher salt for seasoning.
  • to taste Black Pepper Freshly cracked black pepper for seasoning.
  • handful Fresh Basil For garnishing.

Instructions
 

  • Prep all ingredients and gather them for cooking.
  • Heat a large skillet over medium-high heat and add olive oil.
  • Season salmon fillets with salt and pepper, then sear in the skillet for 4-5 minutes on one side.
  • Flip the salmon and cook for an additional 3-4 minutes until cooked through.
  • Remove salmon and set aside, covering with foil to keep warm.
  • In the same skillet, lower heat and sauté minced garlic for 30 seconds.
  • Add sun-dried tomatoes and cook for 1 minute.
  • Add spinach and stir until wilted, about 2-3 minutes.
  • Pour in heavy cream and bring to a gentle simmer.
  • Stir in Parmesan cheese until melted and combined.
  • Return salmon to the skillet, spooning sauce over it, and simmer for 2-3 minutes.
  • Plate the salmon and garnish with fresh basil before serving.

Notes

This dish can be customized with additional vegetables or different proteins. Serve with sides like salad or garlic bread.
