Instructions
1. Cook the pasta according to package instructions in salted boiling water until al dente, about 8-10 minutes.
2. In a skillet, heat olive oil over medium heat and add the ground sausage. Cook until browned, about 5-7 minutes.
3. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
4. Stir in chopped sun-dried tomatoes and cook for 2 minutes.
5. Pour in heavy cream and stir to combine, allowing it to bubble gently.
6. Reduce heat to low and add fresh spinach, stirring until wilted, about 2-3 minutes.
7. Add grated Parmesan cheese and stir until melted and sauce thickens.
8. Season with salt and pepper to taste.
9. Drain pasta, reserving ½ cup of cooking water, and add pasta to the skillet with the sauce.
10. Toss pasta in the sauce, adding reserved pasta water if needed for consistency.
11. Garnish with chopped basil and additional Parmesan cheese before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Can be frozen for 2-3 months.
