  • 1 pound Italian Sausage Ground sausage adds robust flavor.
  • 12 ounces Pasta Penne or fettuccine works well.
  • 1 cup Heavy Cream Creates a rich, velvety sauce.
  • 2 cups Fresh Spinach Adds color and nutrition.
  • ½ cup Sun-Dried Tomatoes Chopped for tangy sweetness.
  • 3-4 cloves Garlic Minced for aromatic flavor.
  • ½ cup Parmesan Cheese Grated for depth of flavor.
  • 1 tablespoon Olive Oil For sautéing sausage and garlic.
  • Salt and Pepper To taste.
  • 1 handful Fresh Basil Chopped for garnish.

Instructions
 

  • 1. Cook the pasta according to package instructions in salted boiling water until al dente, about 8-10 minutes.
  • 2. In a skillet, heat olive oil over medium heat and add the ground sausage. Cook until browned, about 5-7 minutes.
  • 3. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  • 4. Stir in chopped sun-dried tomatoes and cook for 2 minutes.
  • 5. Pour in heavy cream and stir to combine, allowing it to bubble gently.
  • 6. Reduce heat to low and add fresh spinach, stirring until wilted, about 2-3 minutes.
  • 7. Add grated Parmesan cheese and stir until melted and sauce thickens.
  • 8. Season with salt and pepper to taste.
  • 9. Drain pasta, reserving ½ cup of cooking water, and add pasta to the skillet with the sauce.
  • 10. Toss pasta in the sauce, adding reserved pasta water if needed for consistency.
  • 11. Garnish with chopped basil and additional Parmesan cheese before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Can be frozen for 2-3 months.
