Instructions
1. Peel and rinse the russet potatoes, then grate them into thin shreds.
2. Squeeze out excess moisture from the grated potatoes using a kitchen towel or cheesecloth.
3. Finely chop the onion and optionally sauté it in a pan with a teaspoon of oil until translucent.
4. In a mixing bowl, combine the grated potatoes, sautéed onion, salt, and black pepper. Mix well.
5. Preheat the air fryer to 375°F (190°C).
6. Lightly spray the air fryer basket with cooking spray or brush with oil.
7. Form the potato mixture into patties or nests and place them in the air fryer basket without overcrowding.
8. Cook for 12-15 minutes, flipping halfway through, until golden brown and crispy.
9. Remove from the air fryer and let cool on a wire rack for a few minutes.
10. Serve hot with your favorite toppings or as a snack.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the air fryer for best results.
