  • In a large mixing bowl, combine 1 cup of all-purpose flour, ½ cup of cornstarch, 1 teaspoon of baking powder, 1 teaspoon of salt, and ½ teaspoon of pepper. Whisk the dry ingredients together until well blended.
  • In a separate bowl, pour in 1 cup of buttermilk. This will serve as the wet component of your batter.
  • Heat 2-3 cups of vegetable oil in a deep frying pan or pot over medium-high heat. To check if the oil is ready, drop a small amount of batter into the oil; it should bubble and rise to the surface immediately.
  • Once the oil is hot, take each mushroom and dip it into the buttermilk, allowing any excess to drip off. Then, roll it in the flour mixture, ensuring the entire surface is coated.
  • Carefully place the coated mushrooms into the hot oil, ensuring not to overcrowd the pan. Fry in batches for about 4-5 minutes, or until they are golden brown and crispy.
  • Once the mushrooms are cooked, remove them from the oil and place them on a plate lined with paper towels to absorb any excess oil.
  • While the mushrooms are frying, prepare the homemade ranch dip. In a small bowl, combine 1 cup of sour cream, ½ cup of mayonnaise, 1 tablespoon of fresh lemon juice, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and salt and pepper to taste. Mix well until smooth and creamy.
