Instructions
In a mixing bowl, combine the all-purpose flour and salt. Create a well in the center, crack the eggs into the well, and mix until the dough starts to come together. Knead for 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let rest for at least 30 minutes.
Prepare the filling by combining ricotta cheese, grated parmesan, oregano, garlic powder, and black pepper in a mixing bowl. Mix well and adjust seasoning if necessary.
After resting, divide the dough into four pieces. Roll out one piece until thin (about 1/16 inch). Cut out circles (about 3 inches in diameter). Place a spoonful of filling in the center, moisten edges with water, fold, and seal.
Heat oil in a deep pan to 350°F (175°C). Fry ravioli in batches for 2-3 minutes on each side until golden brown. Use a slotted spoon to remove and place on paper towels.
Serve hot with your favorite dipping sauce, such as marinara or creamy garlic sauce.
Notes
For variations, consider different fillings like spinach and feta or ground meat. You can also bake instead of fry for a healthier option.
