  • Begin by preparing the chicken. Cut the boneless chicken breast into bite-sized pieces, ensuring they are uniform in size for even cooking. Place the chicken pieces in a large bowl.
  • In a separate bowl, mix the honey and mustard together until fully combined. Pour this mixture over the chicken and toss until each piece is evenly coated. Allow the chicken to marinate for at least 30 minutes.
  • Set up your breading station: In one shallow dish, add the flour and season with salt, pepper, paprika, and garlic powder. In another dish, beat the eggs until smooth. In a third dish, place the breadcrumbs.
  • Once the chicken has marinated, dredge each piece first in the flour mixture, then dip it into the beaten eggs, and finally roll it in the breadcrumbs.
  • In a large skillet, heat the vegetable oil over medium-high heat. Carefully place the breaded chicken pieces in the hot oil and fry for about 4-5 minutes on each side until golden brown.
  • Transfer the cooked chicken bites to a paper towel-lined plate to drain excess oil. Let them rest for a few minutes before serving.
