Instructions
Preheat your oven to 425°F (220°C).
Wash and peel the potatoes if desired, then cut them into even wedges or cubes.
Slice the onion thinly, about ¼ inch thick.
In a large mixing bowl, combine the cut potatoes and sliced onions. Drizzle the olive oil over the top and coat well.
Add the salt, pepper, garlic powder, and any fresh herbs. Toss everything together thoroughly.
Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
Spread the potato and onion mixture in a single layer on the baking sheet.
Bake for about 25 minutes, stirring halfway through.
Check for doneness; potatoes should be golden brown and crispy. If needed, return to the oven for additional time.
Let cool slightly before serving. Garnish with additional herbs if desired.
