Ingredients
2
pounds
Yukon Gold or Russet Potatoes
Peeled and cut into bite-sized pieces.
1/4
cup
Extra Virgin Olive Oil
For coating the potatoes.
1
cup
Freshly Grated Parmesan Cheese
For flavor and crunchy crust.
1
teaspoon
Garlic Powder
For subtle garlic flavor.
1
teaspoon
Salt
To enhance natural flavors.
1/2
teaspoon
Freshly Ground Black Pepper
For warmth and spice.
Chopped Fresh Herbs (optional)
For garnish.
Instructions
Preheat your oven to 425°F (220°C).
Wash and peel the potatoes, then cut into evenly sized cubes, about 1-inch thick.
Place the cut potatoes into a large mixing bowl. Drizzle the olive oil over the potatoes and toss to coat.
In a separate bowl, combine the Parmesan cheese, garlic powder, salt, and black pepper. Mix well.
Add the cheese mixture to the oiled potatoes and toss to coat evenly.
Line a baking sheet with parchment paper. Spread the seasoned potatoes in a single layer.
Bake for about 25-30 minutes, tossing halfway through for even cooking.
Check for doneness; they should be tender inside and golden brown outside. Broil for an additional 2-3 minutes for extra crispiness if desired.
Let the potatoes cool for a few minutes before transferring to a serving platter. Garnish with fresh herbs if desired.
Serve immediately while hot and enjoy!
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat in the oven to restore crispiness.
