  • 1.5 pounds Ground Beef Choose a blend with moderate fat content for moisture.
  • 2 medium Onions Sliced and sautéed until golden brown.
  • 1 cup Swiss Cheese Shredded, for a creamy texture.
  • 1 cup Breadcrumbs Plain or seasoned, to bind the mixture.
  • 1 large Egg Acts as a binding agent.
  • 0.25 cup Beef Broth Adds moisture and flavor.
  • 1 teaspoon Garlic Powder For aromatic flavor.
  • 1 teaspoon Onion Powder Enhances onion flavor.
  • 1 teaspoon Salt To taste.
  • 0.5 teaspoon Black Pepper To taste.
  • 2 tablespoons Parsley Fresh, chopped for garnish.

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add sliced onions and sauté until golden brown, about 15-20 minutes.
  • Remove caramelized onions from heat and let cool slightly.
  • In a mixing bowl, combine ground beef, cooled onions, Swiss cheese, breadcrumbs, and egg.
  • Add beef broth, garlic powder, onion powder, salt, and pepper to the mixture.
  • Mix gently until just combined. Shape into a loaf and place in the crockpot.
  • Cover and cook on low for 6-8 hours until the internal temperature reaches 160°F.
  • Let the meatloaf rest for 10-15 minutes before slicing. Garnish with parsley and serve warm.

Notes

For variations, consider adding vegetables or different cheeses. This meatloaf is also great for meal prep.
