Instructions
Heat olive oil in a skillet over medium heat. Add sliced onions and sauté until golden brown, about 15-20 minutes.
Remove caramelized onions from heat and let cool slightly.
In a mixing bowl, combine ground beef, cooled onions, Swiss cheese, breadcrumbs, and egg.
Add beef broth, garlic powder, onion powder, salt, and pepper to the mixture.
Mix gently until just combined. Shape into a loaf and place in the crockpot.
Cover and cook on low for 6-8 hours until the internal temperature reaches 160°F.
Let the meatloaf rest for 10-15 minutes before slicing. Garnish with parsley and serve warm.
