Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, whisk together the flour, baking soda, salt, and cinnamon.
In another bowl, cream the butter and brown sugar until light and fluffy.
Add the egg and vanilla extract, mixing until smooth.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the chopped dates and optional nuts or oats.
Drop rounded portions of dough onto the baking sheet, leaving space between each cookie.
Bake for 10-12 minutes until edges are golden and centers are set.
Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Store cookies in an airtight container for up to one week. They can also be frozen for up to three months.
