Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large mixing bowl, combine flour, sugar, baking powder, and salt. Whisk until well mixed.
Cream together butter and sugar until light and fluffy.
Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Gradually add dry ingredients to wet mixture, alternating with milk until combined.
Fold in diced apples gently.
Divide batter between prepared pans and smooth the tops.
Bake for 25-30 minutes or until a toothpick comes out clean.
Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
Beat cream cheese until smooth, then add powdered sugar and mix until combined.
Whip heavy cream until soft peaks form, then fold into cream cheese mixture.
Place one cake layer on a platter and spread half of the cheesecake filling on top.
Top with the second cake layer and spread remaining cheesecake filling on top.
Drizzle caramel sauce over the top and chill for at least 2 hours before serving.
Slice and serve, garnished with additional caramel and apple slices if desired.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
