Instructions
Preheat your oven to 350°F (175°C).
Prepare a muffin tin by lining it with paper liners or greasing it.
In a mixing bowl, combine the dry ingredients: flour, baking powder, salt, and cinnamon. Whisk until well blended.
In another bowl, whisk together the wet ingredients: sugar, eggs, milk, and oil until smooth.
Gradually add the dry ingredients to the wet mixture, stirring gently.
In another bowl, mix cream cheese with powdered sugar until smooth for the filling.
Spoon about a tablespoon of muffin batter into each muffin cup.
Add a dollop of cream cheese filling on top of the batter.
Top with another tablespoon of batter, covering the filling completely.
Sprinkle extra cinnamon on top of each muffin.
Bake for 20 to 25 minutes, or until golden brown.
Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Serve warm or at room temperature.
