  • 5 pieces Dried Guajillo Chiles Soaked in hot water for 15 minutes.
  • 3 pieces Dried Pasilla Chiles Adds complexity to the flavor.
  • 1 large Onion Chopped.
  • 4 cloves Garlic Minced.
  • 2 medium Tomatoes Chopped.
  • 4 cups Beef Broth For braising the meat.
  • 1 teaspoon Cumin Ground.
  • 1 teaspoon Oregano Dried.

  • 1 teaspoon Black Pepper Freshly ground.

Nacho Base

  • 8 cups Tortilla Chips Sturdy chips recommended.
  • 2 cups Shredded Cheese Monterey Jack or Oaxaca cheese.

Garnishes

  • 1/4 cup Fresh Cilantro Chopped.
  • 1 cup Radishes Thinly sliced.
  • 2 pieces Lime Wedges For serving.

Instructions
 

  • 1. Start by preparing the birria. Heat a skillet over medium heat and dry roast the guajillo and pasilla chiles for 2 to 3 minutes until fragrant.
  • 2. Transfer the chiles to a blender. Add the chopped tomatoes, onion, garlic, cumin, oregano, salt, and black pepper. Pour in about one cup of beef broth and blend until smooth.
  • 3. In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Season the beef chuck roast with salt and pepper, then sear it on all sides until browned.
  • 4. Pour the blended sauce over the meat in the pot. Add the remaining beef broth, ensuring that the meat is mostly submerged. Bring to a simmer.
  • 5. Cover the pot and reduce the heat to low. Cook for about 3 to 4 hours, or until the meat is fork-tender and shreds easily.
  • 6. Remove the meat from the pot and let it rest for a few minutes. Shred the meat using two forks.
  • 7. Preheat your oven to 350°F (175°C). On a large baking sheet, spread a layer of tortilla chips evenly.
  • 8. Sprinkle a generous layer of shredded cheese over the tortilla chips.
  • 9. Add a layer of the shredded birria on top of the cheese.
  • 10. Bake for 10 to 15 minutes, or until the cheese is melted and bubbly.
  • 11. Sprinkle chopped cilantro and sliced radishes over the top for freshness. Serve immediately with lime wedges.
  • 12. Optionally, drizzle some of the birria broth over the nachos before serving.

Notes

For variations, consider using different meats, cheese types, or additional toppings like pickled jalapeños or guacamole.
