Instructions
Preheat your oven to 350°F (175°C) and prepare a 15×10-inch jelly roll pan by lining it with parchment paper.
In a mixing bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
In a separate bowl, beat the eggs and granulated sugar together until pale and fluffy, about 5 minutes.
Gradually add the dry ingredients to the egg mixture, alternating with the vegetable oil, folding gently.
Pour the batter into the prepared jelly roll pan and bake for 12-15 minutes.
Remove the cake from the oven and invert it onto a kitchen towel dusted with powdered sugar.
While warm, roll the cake up tightly in the towel and let it cool completely for about 30 minutes.
Prepare the whipped cream by beating the heavy whipping cream and powdered sugar until soft peaks form.
Once the cake is cool, unroll it and spread cherry filling and whipped cream over the surface.
Re-roll the cake tightly without the towel and place seam-side down on a platter.
Spread remaining whipped cream over the top and garnish with chocolate shavings if desired.
Refrigerate for at least 1 hour before serving.
