Wet Ingredients

  • 3 large Eggs Provides moisture and acts as a binding agent.
  • 1/4 cup Vegetable Oil Adds moisture to the cake.

Filling and Topping

  • 1 cup Heavy Whipping Cream For the frosting, whipped to soft peaks.

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a 15×10-inch jelly roll pan by lining it with parchment paper.
  • In a mixing bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
  • In a separate bowl, beat the eggs and granulated sugar together until pale and fluffy, about 5 minutes.
  • Gradually add the dry ingredients to the egg mixture, alternating with the vegetable oil, folding gently.
  • Pour the batter into the prepared jelly roll pan and bake for 12-15 minutes.
  • Remove the cake from the oven and invert it onto a kitchen towel dusted with powdered sugar.
  • While warm, roll the cake up tightly in the towel and let it cool completely for about 30 minutes.
  • Prepare the whipped cream by beating the heavy whipping cream and powdered sugar until soft peaks form.
  • Once the cake is cool, unroll it and spread cherry filling and whipped cream over the surface.
  • Re-roll the cake tightly without the towel and place seam-side down on a platter.
  • Spread remaining whipped cream over the top and garnish with chocolate shavings if desired.
  • Refrigerate for at least 1 hour before serving.
