  • 2 cups All-Purpose Flour Provides structure to the pasta.

  • 1-2 tablespoons Water To adjust dough consistency if needed.

Instructions
 

  • Measure out 2 cups of all-purpose flour and place it on a clean surface. Make a well in the center of the flour mound.
  • Crack 3 large eggs into the well, add 1 teaspoon of salt and 1 tablespoon of olive oil.
  • Using a fork, gently beat the eggs, incorporating the flour from the edges of the well until the mixture is too stiff to mix with the fork.
  • Knead the dough by hand for about 8-10 minutes until smooth and elastic.
  • If the dough feels too dry, add water 1 tablespoon at a time until it reaches the desired consistency.
  • Wrap the kneaded dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
  • After resting, divide the dough into four equal pieces and keep covered.
  • Roll out one piece of dough to about 1/16 inch thick using a pasta machine or rolling pin.
  • Cut the pasta into strips about 1 inch wide and twist each strip to form gemelli.
  • Place the shaped gemelli on a floured baking sheet while repeating with the remaining dough.
  • Bring a large pot of salted water to a boil and cook the gemelli for about 2-4 minutes until they float.
  • Drain the pasta and toss with your favorite sauce. Serve immediately.

Notes

For variations, consider adding herbs, vegetables, or cheese to the dough for added flavor.
