Instructions
Measure out 2 cups of all-purpose flour and place it on a clean surface. Make a well in the center of the flour mound.
Crack 3 large eggs into the well, add 1 teaspoon of salt and 1 tablespoon of olive oil.
Using a fork, gently beat the eggs, incorporating the flour from the edges of the well until the mixture is too stiff to mix with the fork.
Knead the dough by hand for about 8-10 minutes until smooth and elastic.
If the dough feels too dry, add water 1 tablespoon at a time until it reaches the desired consistency.
Wrap the kneaded dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
After resting, divide the dough into four equal pieces and keep covered.
Roll out one piece of dough to about 1/16 inch thick using a pasta machine or rolling pin.
Cut the pasta into strips about 1 inch wide and twist each strip to form gemelli.
Place the shaped gemelli on a floured baking sheet while repeating with the remaining dough.
Bring a large pot of salted water to a boil and cook the gemelli for about 2-4 minutes until they float.
Drain the pasta and toss with your favorite sauce. Serve immediately.
Notes
For variations, consider adding herbs, vegetables, or cheese to the dough for added flavor.
