Made from canned tomatoes, jalapeños, cilantro, lime juice, and spices.
Instructions
Preheat your oven to 375°F (190°C).
Prepare the bell peppers by slicing the tops off and removing the seeds and membranes. Place them upright in a baking dish.
In a skillet, sauté the chopped onion in oil until translucent, about 3-4 minutes.
Add minced garlic and cook for an additional minute.
Incorporate ground turkey or chicken and cook until browned, about 6-8 minutes.
Stir in black beans and corn, mixing well.
Season with chili powder, cumin, salt, and pepper. Adjust seasoning as necessary.
Remove from heat and stir in half of the shredded cheese.
Fill each pepper with the mixture, leaving space at the top for cheese.
Top each pepper with the remaining shredded cheese.
For the ranchero sauce, blend canned tomatoes, jalapeños, cilantro, lime juice, and spices until smooth. Pour over the stuffed peppers.
Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbling.
Let cool for a few minutes before serving. Garnish with cilantro or sour cream if desired.
Notes
For variations, consider using quinoa for a vegetarian option or different types of cheese for unique flavors.
