Vegetables

  • 4 medium Bell Peppers Any color, tops sliced off and seeds removed.

Protein

  • 1 lb Ground Turkey or Chicken Lean meat option.

Aromatics

  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.

Legumes

  • 1 can Black Beans 15 ounces, rinsed and drained.

Grains

  • 1 cup Corn Fresh or frozen kernels.

Spices

  • 1 tbsp Chili Powder For a warm, spicy kick.
  • 1 tsp Cumin Ground.

Seasoning

  • Salt and Pepper To taste.

Dairy

  • 1 cup Shredded Cheese Monterey Jack or cheddar for topping.

Sauce

  • 1 batch Ranchero Sauce Made from canned tomatoes, jalapeños, cilantro, lime juice, and spices.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Prepare the bell peppers by slicing the tops off and removing the seeds and membranes. Place them upright in a baking dish.
  • In a skillet, sauté the chopped onion in oil until translucent, about 3-4 minutes.
  • Add minced garlic and cook for an additional minute.
  • Incorporate ground turkey or chicken and cook until browned, about 6-8 minutes.
  • Stir in black beans and corn, mixing well.
  • Season with chili powder, cumin, salt, and pepper. Adjust seasoning as necessary.
  • Remove from heat and stir in half of the shredded cheese.
  • Fill each pepper with the mixture, leaving space at the top for cheese.
  • Top each pepper with the remaining shredded cheese.
  • For the ranchero sauce, blend canned tomatoes, jalapeños, cilantro, lime juice, and spices until smooth. Pour over the stuffed peppers.
  • Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbling.
  • Let cool for a few minutes before serving. Garnish with cilantro or sour cream if desired.

Notes

For variations, consider using quinoa for a vegetarian option or different types of cheese for unique flavors.
