Choose ciabatta or focaccia, about 1 inch thick each.

Dill or bread-and-butter varieties for tanginess.

Instructions
Gather all your ingredients: mortadella, artisan bread, fresh greens, pickles, mustard, olive oil, and fresh herbs.
Slice your artisan bread into two thick slices, about 1 inch each.
Cut the mortadella into thick slices, about 4-5 slices per sandwich.
Spread mustard on one side of each slice of bread.
Layer the mortadella on one slice of the bread.
Add a handful of fresh greens on top of the mortadella.
Arrange pickles on top of the greens.
Drizzle olive oil over the fillings.
Sprinkle fresh herbs over the top.
Close the sandwich with the second slice of bread, mustard side down.
Grill the sandwich in a panini press or on a skillet over medium heat until golden brown.
Let it cool slightly before slicing in half.
Serve immediately and enjoy!
