Instructions

  • In a mixing bowl, whisk together flour, baking soda, and salt.
  • Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg and beat until fully combined.
  • Incorporate peanut butter into the mixture until well blended.
  • Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  • If using, fold in chocolate chips.
  • Scoop out a tablespoon of dough, flatten it, and place a teaspoon of peanut butter in the center. Enclose the dough around the filling and roll into a ball.
  • Place cookie balls on a parchment-lined baking sheet, leaving space between each.
  • Bake for 10-12 minutes until edges are lightly golden.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  • Serve warm or at room temperature.
