Instructions
 

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

  • In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add pumpkin puree, eggs, and vanilla extract to the butter mixture and mix until well combined.

  • In a separate bowl, combine oats, brown sugar, cinnamon, and cold butter to prepare the crumble topping.

  • Bake for 12-15 minutes until edges are golden and centers are slightly soft.
  • Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
