Instructions
Preheat your oven to 350°F (175°C).
Prepare your baking pans by greasing and flouring two 9-inch round cake pans.
In a large mixing bowl, sift together the dry ingredients: flour, cocoa powder, baking soda, baking powder, and salt.
In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Incorporate the buttermilk and food coloring into the mixture and mix until well blended.
Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
Pour the batter evenly into the prepared cake pans and smooth the tops.
Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Let the cakes cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
Prepare the cream cheese frosting by beating together the cream cheese and butter until creamy.
Gradually add the powdered sugar, mixing until light and fluffy. Adjust consistency with milk if needed.
Once cooled, frost the top of one cake layer, place the second layer on top, and frost the entire cake.
Let the cake set for about 30 minutes before slicing.
Serve at room temperature and enjoy!
