Instructions
 

  • Gather all ingredients on a clean countertop.
  • In a mixing bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Whisk until well combined.
  • Add the chicken to the marinade, ensuring each piece is well-coated. Marinate for at least 15 minutes.
  • Prepare your vegetables by washing and chopping them.
  • Heat a skillet over medium-high heat and add a splash of olive oil.
  • Remove the chicken from the marinade and place it in the hot skillet. Cook for 3-4 minutes until golden brown.
  • Flip the chicken and add the chopped vegetables around it. Stir occasionally.
  • Cook for another 3-4 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  • Remove from heat and let the chicken rest for a few minutes before serving.
