Instructions
Gather all ingredients on a clean countertop.
In a mixing bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Whisk until well combined.
Add the chicken to the marinade, ensuring each piece is well-coated. Marinate for at least 15 minutes.
Prepare your vegetables by washing and chopping them.
Heat a skillet over medium-high heat and add a splash of olive oil.
Remove the chicken from the marinade and place it in the hot skillet. Cook for 3-4 minutes until golden brown.
