Instructions
Preheat your oven to 425°F (220°C).
Wash and scrub the baking potatoes thoroughly, then pat them dry.
Poke several holes in each potato with a fork to allow steam to escape.
Rub the potatoes with olive oil and season with salt.
Place the potatoes directly on the oven rack or on a baking sheet and bake for 45-60 minutes until fork-tender.
In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes.
Add the chopped onion and green bell pepper to the skillet and cook for 3-4 minutes until softened.
Add the minced garlic and sauté for an additional minute until fragrant.
Pour in the tomato sauce, ketchup, Worcestershire sauce, and mustard, stirring to combine.
Season with salt and pepper to taste, and let simmer over low heat for about 10 minutes.
Remove the baked potatoes from the oven and let cool for a few minutes.
Slice each potato open lengthwise and fluff the insides with a fork.
Spoon the Sloppy Joe mixture into each potato and top with shredded cheese.
Garnish with chopped parsley and serve immediately.
