Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Line a 15x10-inch jelly roll pan with parchment paper.
  • In a large mixing bowl, beat the eggs and granulated sugar together until thick and pale.
  • Mix in the vanilla extract until well combined.
  • Sift together the flour, baking powder, and salt. Gradually fold into the egg mixture.
  • Gently fold in the melted butter until fully incorporated.
  • Spread the batter evenly in the prepared baking sheet.
  • Bake for 10-12 minutes, or until the cake springs back when lightly touched.
  • Dust the cake with powdered sugar, invert onto a flat surface, and peel off the parchment paper.
  • Roll the cake and towel together tightly and allow to cool completely.
  • Whip the heavy cream with powdered sugar and vanilla until soft peaks form. Fold in fruit puree and food coloring if desired.
  • Unroll the cake and spread the filling evenly over it.
  • Re-roll the cake without the towel, seam-side down on a serving platter.
  • Cover with plastic wrap and refrigerate for at least 1 hour to set the filling.

Notes

Garnish with fresh fruits or edible flowers before serving.
