Instructions
Preheat your oven to 375°F (190°C).
Line a 15x10-inch jelly roll pan with parchment paper.
In a large mixing bowl, beat the eggs and granulated sugar together until thick and pale.
Mix in the vanilla extract until well combined.
Sift together the flour, baking powder, and salt. Gradually fold into the egg mixture.
Gently fold in the melted butter until fully incorporated.
Spread the batter evenly in the prepared baking sheet.
Bake for 10-12 minutes, or until the cake springs back when lightly touched.
Dust the cake with powdered sugar, invert onto a flat surface, and peel off the parchment paper.
Roll the cake and towel together tightly and allow to cool completely.
Whip the heavy cream with powdered sugar and vanilla until soft peaks form. Fold in fruit puree and food coloring if desired.
Unroll the cake and spread the filling evenly over it.
Re-roll the cake without the towel, seam-side down on a serving platter.
Cover with plastic wrap and refrigerate for at least 1 hour to set the filling.
Notes
Garnish with fresh fruits or edible flowers before serving.
