  • 1 inch Ginger, sliced Adds warming spice.

Instructions
 

  • In a large pot, combine the chicken broth and water. Bring to a gentle boil over medium heat.
  • Add the sliced ginger, minced garlic, soy sauce, and miso paste. Stir well to dissolve the miso and combine all flavors. Let it simmer for about 10 minutes.
  • Cook the instant ramen noodles according to package instructions (usually 3-4 minutes). Drain and set aside.
  • Taste the broth and adjust seasoning if necessary, adding more soy sauce or miso paste as desired.
  • Add the shredded chicken to the broth and heat through for 2-3 minutes.
  • Add spinach or bok choy and stir until wilted, about 1 minute.
  • Place cooked ramen noodles in a bowl. Ladle hot broth and toppings over the noodles.
  • Top with chopped green onions, soft-boiled egg, and any additional toppings.
  • Enjoy your homemade ramen while hot.
