Instructions
Preheat your oven to 475°F (245°C).
Prepare the pizza dough on a floured surface, rolling it out to about ¼ inch thickness.
Transfer the rolled-out dough onto a baking sheet lined with parchment paper or a preheated pizza stone.
Drizzle olive oil over the surface of the dough and spread it evenly.
Spread mayonnaise across the dough, leaving a small border around the edges.
Evenly distribute fresh sweet corn over the mayonnaise.
Sprinkle finely diced red onion over the corn.
Mix lime juice, chili powder, salt, and pepper in a bowl, then drizzle over the corn and onions.
Scatter crumbled queso fresco on top of the corn layer.
Bake for 12-15 minutes, or until the crust is golden brown and cheese is bubbly.
Remove from the oven, let cool for a couple of minutes, and sprinkle with chopped cilantro.
Slice into wedges and serve warm.
