  • 1 lb Pizza Dough Store-bought or homemade, rolled out to preferred thickness.

Fresh Sweet Corn

  • 1 cup Fresh Sweet Corn Grilled or boiled.

Creamy Elements

  • 1/2 cup Mayonnaise Adds creaminess and binds toppings.
  • 1 tbsp Lime Juice Juice of one lime for brightness.
  • 1 tsp Chili Powder Adjust to taste for heat.

Toppings

  • 1/2 cup Queso Fresco Crumble on top for authenticity.
  • 1/4 cup Red Onion Finely diced for crunch.
  • 1 tbsp Olive Oil Drizzle over dough before baking.

Seasonings

Garnish

  • 1 handful Cilantro Freshly chopped for garnish.

Instructions
 

  • Preheat your oven to 475°F (245°C).
  • Prepare the pizza dough on a floured surface, rolling it out to about ¼ inch thickness.
  • Transfer the rolled-out dough onto a baking sheet lined with parchment paper or a preheated pizza stone.
  • Drizzle olive oil over the surface of the dough and spread it evenly.
  • Spread mayonnaise across the dough, leaving a small border around the edges.
  • Evenly distribute fresh sweet corn over the mayonnaise.
  • Sprinkle finely diced red onion over the corn.
  • Mix lime juice, chili powder, salt, and pepper in a bowl, then drizzle over the corn and onions.
  • Scatter crumbled queso fresco on top of the corn layer.
  • Bake for 12-15 minutes, or until the crust is golden brown and cheese is bubbly.
  • Remove from the oven, let cool for a couple of minutes, and sprinkle with chopped cilantro.
  • Slice into wedges and serve warm.

Notes

For variations, consider grilling the corn, adding jalapeños, or using different cheeses.
