  • 1 cup Sweet Corn Fresh or frozen, thawed if frozen.
  • 0.5 medium Red Onion Finely chopped.
  • 2 medium Tomatoes Diced.
  • 1 handful Fresh Cilantro Chopped.
  • 1 lime Lime Juice Juiced.

  • Gather all ingredients, ensuring black beans are rinsed and drained.
  • If using fresh corn, slice kernels off the cob; if frozen, thaw it for 10-15 minutes.
  • Finely chop the red onion into small pieces.
  • Dice the tomatoes into bite-sized pieces, removing excess seeds if desired.
  • In a large mixing bowl, combine black beans, sweet corn, red onion, and tomatoes.
  • Add chopped cilantro to the mixture.
  • Squeeze lime juice over the ingredients, catching any seeds.
  • Season with salt and black pepper to taste.
  • Cover the bowl and let the salsa sit at room temperature for 15 minutes.
  • Stir gently before serving and adjust seasoning if necessary.
  • Serve with tortilla chips, on tacos, or as a salad topping.
