Instructions
Rinse the fresh cranberries under cold water and discard any soft or blemished ones.
Pulse the rinsed cranberries in a food processor until coarsely chopped.
Add the finely diced red onion to the food processor with the cranberries.
Chop the jalapeño pepper finely and add it to the mixture in the food processor.
Add the roughly chopped cilantro to the food processor.
Juice the lime and add the juice to the mixture.
Add the honey and a pinch of salt to taste.
Pulse the mixture until well combined, ensuring it remains chunky.
Transfer the salsa to a serving bowl and refrigerate for at least 30 minutes to allow flavors to meld.
Before serving, stir gently and adjust seasoning if necessary.
Serve with tortilla chips, grilled chicken, or as a topping for various dishes.
