  • 1 cup Granulated Sugar For cheesecake filling
  • 16 ounces Cream Cheese Softened
  • 1 cup Sour Cream
  • 2 teaspoons Vanilla Bean Paste
  • 1/2 cup Butter Melted for crust
  • 1 cup All-Purpose Flour For crust
  • 1/4 cup Brown Sugar For crust
  • 1 cup Rolled Oats For crust topping
  • 1/2 cup Chopped Walnuts For crust

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine melted butter, granulated sugar, brown sugar, all-purpose flour, oats, and chopped walnuts. Mix until crumbly.
  • Press the mixture into the bottom of a greased 9-inch springform pan and bake for 10-12 minutes until lightly golden.
  • In a separate bowl, beat softened cream cheese until smooth. Gradually add granulated sugar, then mix in sour cream and vanilla bean paste until fully incorporated.
  • Pour the cheesecake mixture over the cooled crust and spread evenly. Bake for 45-50 minutes until edges are set but center jiggles slightly.
  • Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  • Chill in the refrigerator for at least 4 hours, preferably overnight.
  • Prepare the strawberry topping by combining sliced strawberries with a bit of sugar and letting them sit for 15-20 minutes.
  • Gently spoon the strawberries over the chilled cheesecake and serve.

Notes

For variations, consider adding lemon zest or chocolate ganache. Serve with whipped cream for extra indulgence.
