Main Ingredients

  • 1 whole Whole Chicken (about 4-5 pounds) Look for a fresh, organic bird for best flavor.
  • 2 teaspoons Salt Use kosher salt for even distribution.
  • 1 teaspoon Black Pepper Freshly cracked for best flavor.
  • 10 cloves Garlic, minced Freshly minced for stronger flavor.
  • 1 cup Unsalted Butter, melted Melted but not bubbling.
  • 1 tablespoon Fresh Herbs (thyme and rosemary), chopped Adds aromatic notes to the chicken.
  • 1 whole Fresh Lemon, cut into wedges Adds brightness and flavor.

Optional Vegetables

  • 3 cups Vegetables (carrots, potatoes, onions) Choose your favorite root vegetables.

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Prepare the chicken by rinsing it under cold water and patting it dry with paper towels.
  • In a mixing bowl, combine the melted butter, minced garlic, chopped herbs, salt, and pepper.
  • Loosen the skin over the chicken breast and thighs, then spread half of the garlic butter mixture under the skin.
  • Rub the remaining garlic butter mixture all over the outside of the chicken.
  • Season the cavity of the chicken with salt and pepper, and stuff it with lemon wedges.
  • If using vegetables, arrange them in the bottom of a roasting pan and drizzle with olive oil.
  • Place the chicken on top of the vegetables, breast side up.
  • Roast the chicken for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
  • Baste the chicken halfway through roasting with pan juices.
  • Let the chicken rest for 15 minutes before carving.
  • Carve the chicken and serve it with roasted vegetables.

Notes

Leftovers can be stored in an airtight container for up to three days. Reheat gently in the oven.
