Choose your favorite root vegetables.
Instructions
Preheat your oven to 425°F (220°C).
Prepare the chicken by rinsing it under cold water and patting it dry with paper towels.
In a mixing bowl, combine the melted butter, minced garlic, chopped herbs, salt, and pepper.
Loosen the skin over the chicken breast and thighs, then spread half of the garlic butter mixture under the skin.
Rub the remaining garlic butter mixture all over the outside of the chicken.
Season the cavity of the chicken with salt and pepper, and stuff it with lemon wedges.
If using vegetables, arrange them in the bottom of a roasting pan and drizzle with olive oil.
Place the chicken on top of the vegetables, breast side up.
Roast the chicken for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
Baste the chicken halfway through roasting with pan juices.
Let the chicken rest for 15 minutes before carving.
Carve the chicken and serve it with roasted vegetables.
Notes
Leftovers can be stored in an airtight container for up to three days. Reheat gently in the oven.
