Instructions
1. Place the peeled and diced Yukon Gold potatoes in a large pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and return to pot.
2. In a skillet, heat 2 tablespoons of butter over medium-high heat. Add steak pieces in a single layer, season with salt and pepper, and sear for 2-3 minutes on each side until browned. Remove from skillet.
3. In the same skillet, reduce heat to medium, add remaining butter and minced garlic. Sauté for 30 seconds until fragrant. Return steak to skillet and toss in garlic butter for 1 minute.
4. For the mashed potatoes, add milk, remaining butter, and additional salt and pepper to the drained potatoes. Mash until creamy, adjusting seasoning as needed.
5. Serve mashed potatoes topped with garlic butter steak bites and drizzle with remaining garlic butter. Garnish with chopped chives.

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat gently, adding a splash of milk to the mashed potatoes.
