Ingredients
  

Salad Base

  • 6 cups mixed salad greens such as romaine, arugula, and spinach
  • 1 cup cherry tomatoes halved
  • 1 medium cucumber diced
  • 1 medium avocado diced
  • 1/2 cup radishes thinly sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup sunflower seeds or pumpkin seeds

Fresh herbs

  • 1/4 cup fresh herbs such as parsley, basil, and chives

Dressing Ingredients

  • 1 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon Dijon mustard
  • 1 cup fresh herbs such as parsley, tarragon, and chives
  • 1 clove garlic minced

Seasoning

  • Salt to taste
  • Pepper to taste

Instructions
 

  • Prepare the dressing: In a medium bowl, combine the plain Greek yogurt and mayonnaise. Mix well until smooth. Add the lemon juice and Dijon mustard, stirring to combine. Incorporate the fresh herbs, minced garlic, salt, and pepper. Blend until the dressing is creamy and well combined. For a smoother texture, you can use a food processor to pulse the ingredients until desired consistency is reached. Set aside.
  • Prepare the vegetables: Wash and dry the mixed salad greens thoroughly to remove any moisture. Tear the greens into bite-sized pieces and place them in a large salad bowl. Next, slice the cucumber, cherry tomatoes, radishes, and red onion, and add them to the bowl with the greens.
  • Add the avocado: Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Dice the avocado into small pieces and gently fold them into the salad, being careful not to mash them.
  • Incorporate the feta cheese and seeds: Sprinkle the crumbled feta cheese over the salad, followed by the sunflower or pumpkin seeds. These ingredients add a delightful contrast in flavor and texture.
  • Toss the salad: Drizzle the prepared Green Goddess dressing over the salad, starting with a few tablespoons and adding more to taste. Gently toss all the ingredients together until the salad is evenly coated with the dressing.
  • Season to taste: Add salt and pepper as needed, adjusting to your flavor preference. Toss the salad again to incorporate the seasoning.
  • Serve: Transfer the salad to individual serving plates or serve family-style in the bowl. Garnish with extra herbs or seeds if desired for an appealing presentation.
