Instructions
In a medium saucepan over medium heat, add the chopped onions and sauté until translucent, about 5 minutes.
Add the minced garlic and cook for an additional minute until fragrant.
Add the chopped tomatoes, sugar, salt, pepper, and chili flakes. Stir well and cook down until the tomatoes release their juices.
Reduce heat to low and simmer for 20-25 minutes until thickened.
Add apple cider vinegar during the last few minutes of cooking. Adjust seasoning to taste.
Remove the jam from heat and let it cool slightly.
Spread butter on one side of each slice of bread.
Place two slices of bread butter-side down, add cheese, then spoon spicy tomato jam on top.
Top with remaining slices of bread butter-side up.
Heat a skillet over medium heat and grill sandwiches for 3-4 minutes on each side until golden brown.
Remove from skillet, let sit for a minute, then slice and serve.
Notes
Store leftovers wrapped in foil or in an airtight container for up to 2 days. Can be frozen for up to a month.
