Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 2-3 minutes.
Add the minced garlic and continue to sauté for another minute.
Add the ground beef to the skillet. Cook until browned, approximately 5-7 minutes. Drain excess fat if necessary.
Sprinkle the taco seasoning over the cooked beef and mix well. Allow it to simmer for a few minutes.
Prepare a baking sheet by lining it with parchment paper. Spread a layer of tortilla chips evenly across the sheet.
Spoon the seasoned ground beef mixture over the tortilla chips.
Sprinkle the shredded cheddar and Monterey Jack cheese over the beef and chips.
If using jalapeños, scatter the slices over the cheese layer.
Place the baking sheet in the oven and bake for about 10-15 minutes, until the cheese is melted and bubbly.
Remove the nachos from the oven and let them cool for a minute. Top with diced tomatoes, fresh cilantro, diced avocado, and black olives if using.
Serve warm, accompanied by a dollop of sour cream on the side.
