Ingredients
  

Protein

  • 1 pound Ground turkey Brown lightly before adding to the slow cooker.

Vegetables

  • 4 medium Potatoes Peeled and diced.
  • 2 cups Carrots Chopped.
  • 1 large Onion Chopped.
  • 2-3 cloves Garlic Minced.

Liquids

  • 4 cups Vegetable broth Low-sodium recommended.
  • 2 tablespoons Tomato paste

Seasonings

  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Dried thyme
  • 2 leaves Bay leaves
  • 2 cups Green beans Trimmed and cut.

Instructions
 

  • Prepare your ingredients: wash and peel the potatoes, carrots, and onion. Dice the potatoes and cut the carrots into thick slices. Chop the onion finely.
  • Heat a skillet over medium heat. Add the ground turkey and cook until browned, breaking it into small pieces. Drain excess fat.
  • In the slow cooker, combine the browned turkey, diced potatoes, chopped carrots, and minced garlic. Pour in the vegetable broth.
  • Add the tomato paste and stir well to incorporate.
  • Season with salt, pepper, thyme, and bay leaves. Stir to distribute the spices.
  • Add the green beans and cover the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours.
  • Check the texture of the potatoes and carrots about 30 minutes before serving. Adjust seasonings if necessary.
  • Remove bay leaves before serving. Ladle the stew into bowls and enjoy hot.
