  • 1 pound Ground Italian Sausage Mild or spicy based on preference.
  • 9 ounces Cheese Tortellini Fresh or frozen.
  • 1 medium Onion, diced Adds sweetness and aroma.
  • 3 cloves Garlic, minced Infuses flavor.
  • 2 medium Carrots, sliced or diced Adds sweetness and color.
  • 2 cups Fresh Spinach Wilts quickly, adds nutrients.
  • 4 cups Low-Sodium Chicken Broth Base of the soup.
  • 1 cup Heavy Cream Adds creaminess.

Seasonings

  • Salt To taste.
  • Pepper To taste.
  • Italian Herbs Basil and oregano to taste.

Optional Garnish

  • Freshly Grated Parmesan Cheese For serving.

Instructions
 

  • 1. Heat a large pot over medium heat and add the ground Italian sausage. Break it into small pieces and cook for 5-7 minutes until browned.
  • 2. Remove the sausage and set aside, leaving the rendered fat in the pot.
  • 3. In the same pot, add the diced onion and sauté for 3-4 minutes until translucent.
  • 4. Add minced garlic and cook for an additional minute until fragrant.
  • 5. Stir in sliced carrots and cook for about 5 minutes until they soften.
  • 6. Return the cooked sausage to the pot and mix with the vegetables.
  • 7. Pour in the chicken broth and bring to a gentle boil, then reduce to a simmer for 10 minutes.
  • 8. Add cheese tortellini and cook according to package instructions, about 5-7 minutes.
  • 9. Stir in fresh spinach and let it wilt for 1-2 minutes.
  • 10. Pour in heavy cream and simmer for another 2-3 minutes. Adjust seasoning as needed.
  • 11. Serve hot, garnished with freshly grated Parmesan cheese.

Notes

Store leftovers in an airtight container for up to three days. Reheat gently on the stove.
