Instructions
1. Heat a large pot over medium heat and add the ground Italian sausage. Break it into small pieces and cook for 5-7 minutes until browned.
2. Remove the sausage and set aside, leaving the rendered fat in the pot.
3. In the same pot, add the diced onion and sauté for 3-4 minutes until translucent.
4. Add minced garlic and cook for an additional minute until fragrant.
5. Stir in sliced carrots and cook for about 5 minutes until they soften.
6. Return the cooked sausage to the pot and mix with the vegetables.
7. Pour in the chicken broth and bring to a gentle boil, then reduce to a simmer for 10 minutes.
8. Add cheese tortellini and cook according to package instructions, about 5-7 minutes.
9. Stir in fresh spinach and let it wilt for 1-2 minutes.
10. Pour in heavy cream and simmer for another 2-3 minutes. Adjust seasoning as needed.
11. Serve hot, garnished with freshly grated Parmesan cheese.
Notes
Store leftovers in an airtight container for up to three days. Reheat gently on the stove.
