  • 2 medium Ripe Bananas Mashed until smooth.
  • 1 cup Fresh Blueberries Gently washed and dried.
  • 2 cups Old-Fashioned Oats Provides the base for the cookies.
  • 0.5 cup Honey or Maple Syrup Natural sweetener.
  • 1 teaspoon Baking Powder For leavening.
  • 1 teaspoon Ground Cinnamon Enhances flavor.
  • 1 pinch Salt Balances sweetness.
  • 0.5 cup Chopped Nuts (optional) Such as walnuts or almonds.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Mash the ripe bananas in a large mixing bowl until smooth.
  • Add honey or maple syrup to the mashed bananas and stir until combined.
  • In another bowl, mix old-fashioned oats, baking powder, ground cinnamon, and salt.
  • Gradually add the dry mixture to the wet banana mixture and stir until just combined.
  • Fold in the fresh blueberries gently.
  • If using, fold in chopped nuts.
  • Line a baking sheet with parchment paper and drop rounded portions of dough onto it.
  • Flatten each cookie slightly with the back of a spoon.
  • Bake for 12 to 15 minutes until golden brown around the edges.
  • Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  • Enjoy immediately or store in an airtight container.

Notes

These cookies can be frozen for up to three months. Enjoy with yogurt or as a snack!
