Instructions
Preheat your oven to 350°F (175°C).
Mash the ripe bananas in a large mixing bowl until smooth.
Add honey or maple syrup to the mashed bananas and stir until combined.
In another bowl, mix old-fashioned oats, baking powder, ground cinnamon, and salt.
Gradually add the dry mixture to the wet banana mixture and stir until just combined.
Fold in the fresh blueberries gently.
If using, fold in chopped nuts.
Line a baking sheet with parchment paper and drop rounded portions of dough onto it.
Flatten each cookie slightly with the back of a spoon.
Bake for 12 to 15 minutes until golden brown around the edges.
Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Enjoy immediately or store in an airtight container.

These cookies can be frozen for up to three months. Enjoy with yogurt or as a snack!
