Instructions
Preheat your oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans.
Mash the ripe bananas until smooth, about 1 ½ to 2 cups.
Cream together softened butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition.
Mix in the mashed bananas until well combined.
In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to banana mixture, alternating with milk.
Pour batter into prepared pans and smooth the tops.
Bake for 25-30 minutes or until a toothpick comes out clean.
Cool cakes in pans for 10 minutes, then transfer to wire rack to cool completely.
Prepare frosting by beating cream cheese and butter until smooth. Gradually add powdered sugar and mix until incorporated.
Add milk or cream to achieve desired frosting consistency, then mix in vanilla.
Once cakes are cooled, frost the top of one layer, place the second layer on top, and frost the top and sides.
Garnish with banana slices or chopped nuts if desired.
Slice and serve to enjoy!
Notes
For variations, consider adding nuts, spices, or chocolate to the batter. Adjust frosting sweetness as desired.
