Instructions
Peel and dice the russet potatoes into small, even cubes.
Place the diced potatoes into a large pot of salted water and bring to a boil. Cook for 10-15 minutes until fork-tender.
Drain the potatoes and let them cool for a few minutes.
Transfer the cooled potatoes to a mixing bowl and mash until smooth.
Add shredded cheese, chopped green onions, flour, salt, and pepper to the mashed potatoes. Mix until well combined.
Preheat the air fryer to 400°F (200°C) for about 5 minutes.
Roll the potato mixture into bite-sized balls and flatten slightly to form tater tots.
Spray the air fryer basket with cooking spray and place the tater tots in a single layer.
Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
Remove from the air fryer and let cool for a couple of minutes before serving.
Enjoy with your favorite dipping sauces!
Notes
For variations, consider adding jalapeños for spice or mixing in different cheeses.
