Instructions
 

  • 1. Prepare the chicken by seasoning it with salt and pepper. In a large pot over medium heat, add a tablespoon of oil. Cook the chicken until golden brown on both sides, about 5-7 minutes. Remove and set aside.
  • 2. In the same pot, add more oil if necessary, then add the diced onion and bell pepper. Sauté for 3-4 minutes until the onion is translucent.
  • 3. Add minced garlic and cook for an additional minute. Then add chili powder and cumin, stirring well.
  • 4. Return the cooked chicken to the pot, shredding it into bite-sized pieces. Pour in the chicken broth and diced tomatoes, stirring to combine.
  • 5. Let the soup simmer for about 20-25 minutes, allowing the flavors to meld.
  • 6. While the soup simmers, prepare the tortilla strips by cutting corn tortillas into strips and baking them at 375°F (190°C) for 10-15 minutes until crispy.
  • 7. Taste the soup and adjust seasoning with salt and pepper as needed. Stir in chopped cilantro, reserving some for garnish.
  • 8. Serve the soup hot, topped with crispy tortilla strips and garnished with cilantro and lime wedges.

Notes

This soup is perfect for customizing with additional toppings like avocado or cheese. It can also be made in advance for better flavor.
