For cooking the tortilla bites.
Instructions
Gather all your ingredients on a clean workspace. Make sure your cream cheese is softened for easy mixing.
In a medium bowl, combine the softened cream cheese with the shredded cheese, stirring until well blended.
Add the chopped vegetables to the cheese mixture and stir well.
Season the mixture with garlic powder, onion powder, paprika, and freshly chopped herbs. Mix thoroughly.
Lay one tortilla flat on a clean surface. Spoon a generous amount of the creamy filling onto the center of the tortilla.
Carefully fold the sides of the tortilla over the filling, then roll it tightly from the bottom up.
In a large skillet, heat the olive oil over medium heat.
Once the oil is hot, place the rolled tortillas seam-side down in the pan. Cook for about 2-3 minutes until golden brown.
Flip the tortilla bites to brown the other side for another 2-3 minutes.
Transfer the tortilla bites to a paper towel-lined plate to absorb any excess oil.
Let them cool slightly before slicing each tortilla bite into bite-sized pieces.
Serve warm with your favorite dipping sauces, such as salsa or guacamole.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a skillet for best texture.
