Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Whisk until well mixed.
Add the cold, cubed unsalted butter to the flour mixture. Blend until it resembles coarse crumbs.
Add the egg yolk and mix until the dough comes together. If too dry, add cold water a tablespoon at a time.
Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Roll out the dough on a floured surface to about 1/8-inch thick. Cut out circles for tart pans.
Press each dough circle into the tart pans and trim excess dough.
Spoon about a tablespoon of jam into each tart shell, being careful not to overfill.
Place the tart pans on a baking sheet and bake for 15-20 minutes until golden brown.
Allow the tarts to cool in the pans for 5 minutes, then transfer to a wire rack to cool completely.
Serve at room temperature and enjoy!

Store leftovers in an airtight container at room temperature for up to three days.
